Healthy African Snack 4: Akpu Mmiri.

Akpu mmiri simply refers to wet cassava slices that are consumed as snacks in Nigeria. Akpu mmiri has its origin in South East Nigeria among Igbo people.
Akpu mmiri is a whole food because of the simple processing method which allows most of the cassava nutrients to be retained.
