Akpu mmiri simply refers to wet cassava slices that are
consumed as snacks in Nigeria. Akpu mmiri has its origin in South East Nigeria
among Igbo people.
Akpu mmiri is a whole food because of the simple processing
method which allows most of the cassava nutrients to be retained.
Akpu mmiri preparation.
- Peel and wash cassava tubers.
- Cook and allow to cool.
- Cut into strips of about 3mm in thickness.
- Soak in water overnight to allow some fermentation.
- Rinse the next day and serve.
Akpu mmiri is usually served with;
Akpu mmiri has almost all the nutritional benefits of
cassava and those of the coconut or groundnut or palm kernel.
